The puliyodharai (tamarind rice) is the prasatham of the iyengar temple and the puliyodharai rice can be kept for 2 days in good condition but just don’t use the hands on it. The puliyodharai tamarind sauce can be kept up to 1 month and you can mix it with the white rice whenever you needed to prepare the iyengar puliyodharai.
Ingredients needed to make Iyengar Puliyodharai dish
- Tamarind (Puli)
- Katti Perugayam
- Salt
- Turmeric powder (Manjal Podi)
- Dry Chilli (Vatha Milagai)
- Kadugu
- Uluntha Parupu
- Kadalai Parupu
- Verkadalai
Recipe
Now put the nallannai on the kadai vessel and boil it. Put a small piece of katti perungayam into the boiling oil. Now add kadugu. After that add uluntha parupu, kadalai parupu and dry chillis.
Now take half hand of tamarind (puli) and put in in a cup of water. Let the tamarind and water mix together and once its done, put this water inside the boiling vessel. Now add turmeric powder (manjal podi) and salt. Let all boil for 30 minutes.
Now take the sauce from the vessel and mix it with the white rice to prepare the iyengar puliyodharai. Soru pathama irukanum and mix it properly.
